Read the ingredient panel and there is almost nothing on it: Washington split peas, dehydrated celery, dehydrated carrots, onion, spices, Real Salt and black pepper. That is the point. A short list means the peas have to be good, and Rill Foods buys them close to its kitchen in Thorp, Washington and hand packs the mix in small batches. The bag holds the pea and celery mix and a separate spice packet, so the seasoning goes in at the start and does not sit in the peas on the shelf.
You bring 8 cups of water and, if you want it, a ham bone, ham chunks or bacon. Fifty minutes at a simmer and the peas fall apart into that thick green bowl that eats like a meal. It runs equally well in a slow cooker all day or in an Instant Pot in twenty minutes. Left as packed it is vegetarian, dairy free, gluten free and sugar free, and one 15.9 oz bag makes 10 servings.
