Rainbow is the farm’s own blend of its coloured kernels, so a single bag pours out red, purple, midnight blue, yellow and white all mixed together. Uncooked it looks like something you would put in a jar on a shelf. Popped, it comes up white and yellow like any other popcorn, because Amish Country Popcorn uses no dyes and no preservatives and the colour lives only in the hull.

Four ounces pops to about four quarts, which is a bowl for two people and a film. It is the cheapest way to find out whether you like the blend before committing to a two pound bag, and at under two dollars it is the kind of thing that ends up in a stocking or a party favour by the dozen.
