Chai spice done with restraint. Apolis builds this one on organic black teas and layers in the traditional four, ginger, cinnamon, clove and cardamom, then finishes it with just enough vanilla to take the edge off the heat. It is smooth enough to drink black, it is very good with milk and sugar, and it holds its shape over ice.

Fifteen pyramid bags come in a powder coated glass mason jar about three inches across and five tall. The jar is airtight and opaque, so light never reaches the leaf, and Apolis sells refill bags for it once the first fifteen are gone. The bag mesh is PLA, a plant derived compostable material with no plasticizers, microplastics or adhesives in it. Blended with 92 percent organic ingredients and packed in the maker's own Sumner, Washington warehouse. Net weight 1.7 oz.
